Set the Ninja Foodi to Sear/Saute MD and add the w tsp of olive oil. After a few minutes add the chopped onion and diced pepper and cook for 2 minutes until softened.

Add the pancetta and cook for a further 2 minutes, then add the chicken and cook until it looses it's colour.

Add the 200g of arborio risotto rice and cook for 2 minutes until the rice starts to turn translucent. This helps the rice absorb the stock.

Add the 600 ml of vegetable stock and give it a good stir. Add the pressure cook lid to the Ninja Foodi, makes sure the vent is set to seal and set the Foodi to Pressure HI for 7 minutes. Check that the safety valve closes during Pre heat.

After the 7 minutes are up, let the Ninja Foodi naturally vent for 10 minutes, then quick vent, before taking the pressure lid off. Give the risotto a good stir and enjoy.
