Assemble ingredients

In mixing bowl add Besan + semolina + salt + sugar + curd + oil + ginger paste + chilli paste and mix very nicely. Keep rest for 10 - 15 minutes.

Keep steamer ready and allow to form steam. Grease mould and keep aside.

Now check the batter, if required add water accordingly, it needs thick and dropping consistency. Lastly, add the fruit salt and mix gently, the batter turns frothy. Final batter is ready.

Pour the batter into greased mould, tap it and then put inside the steamer, and steam for 15 - 20 minutes under low to medium flame. Check-in between.

Allow cooling and de mould it.

In a small pan add oil, add mustard seeds + green chili and allow to sizzle, then add hing + curry leaves and sauté for a few seconds then add water+ salt + sugar and give a nice boil, boil for 2-3 minutes and pour this tampering water to the Dhoklas.

Dhokla is done, garnish with chopped Coriander and it is ready to serve.
