Put hunk of beef into Dutch oven
Pour in enough apple juice to cover about 1/2 to 3/4, don't need to completely cover beef with juice

Set oven to 250 and cook low and slow for a couple hours, check periodically to make sure juice hasn't evaporated, add more if needed

Pull out and Shred once it's cooked to fork tender

Cook tater tots per instructions

While waiting for tots to cook, slice up onion and peppers, throw into skillet, cook till a little soft, I like them to still have a little bite

Put tots into large casserole dish or deep rectangle pan and mix in shredded beef, onion, and peppers

Take half the jar of queso Blanco and warm it up, not cooked, just warmed, take spoon and drizzle it on top

Give a good drizzle on top with all other sauces

Top with feta cheese and sliced green onion
