I always have a lot of miso left over after making miso soup. I also love Umeboshi. I know you can cook with ume, but I couldn't find any recipes.

Note: If you want to make it less thick, add more sake.

So far, it works great on pork and chicken.

Ingredients

10 minutes
  • 2 tbsp.Miso paste
  • 5whole Umeboshi
  • 2 tbsp.Mirin
  • 1 tbsp.Dry sake

Steps

10 minutes
  1. 1

    Remove the seeds from the Umeboshi and mash them into a paste with a spoon.

  2. 2

    Add the miso paste and mix.

  3. 3

    Add the mirin and slowly mix until both are combined.

  4. 4

    Add the sake and mix until both are combined.
