Ingredients

  • 2- pkg of smoked sausage
  • 1- small onion (diced)
  • 2- bell peppers (diced)
  • 1- tsp Cumin
  • 1- tsp paprika
  • 1 1/2- Tbsp Chili powder
  • 1/2- tsp Coriander
  • 1- Tbsp garlic powder
  • 2- Tbsp Cajun seasoning
  • 1/2- tsp Celery seed
  • 1- Tbsp Worchestershire sauce
  • 16- Oz chicken broth
  • Hot sauce/Sriracha (to taste)
  • 4- cups brown rice
  • 2 canskidney beans

Steps

  1. 1

    Cut up sausage, onion and bell peppers. Sauté in large pan with oil or bacon grease.

  2. 2

    Add the chicken broth, beans, and all spices to the crockpot. Set to high.

  3. 3

    When onion and pepper soften a bit, add the entire pan contents into the crockpot. Cook on high for 3-4 hours or on low for 7-8 hours.

  4. 4

    When there is approx 1 hour until serving time, prepare rice in a separate pan, following package instructions. When rice is cooked, add to the crockpot and stir in. Turn crockpot to low and cook together for approx 30 minutes before serving. Add a bit of brown sugar and hot sauce to suit your taste.
