Ingredients

: 4 
  1. 1/2 c.all-purpose flour
  2. 1 tsp.Cajun seasoning (I use slap-ya-mama)
  3. 1/4 c.cornstarch
  4. 1 tsp.garlic powder
  5. 1 tsp.onion powder
  6. 4 (6 oz.)fresh tilapia fillets or store bought
  7. Kosher/Sea salt
  8. Freshly ground black pepper
  9. 1 tbsp.olive oil, divided
  10. 2tbsps. real unsalted butter
  11. Buttermilk for marinating
  12. 2 tbsp.cilantro leaves, for garnish
  13. Lime wedges, for serving

Cooking Instructions

    Step 1
    wash, clean, and cut fish in half; add fish to a large bowl of buttermilk and marinate for at least 1 hour before cooking.

    Step 2
    In a large bowl, whisk together flour, garlic powder cornstarch, onion powder, Cajun seasoning, and Italian seasoning. Whisk to combine. (you can use whatever seasonings you want)

    Step 3
    Season tilapia filets generously with salt and pepper, then dip each in flour mixture, shaking off any excess flour. Place on a clean plate or baking sheet and refrigerate for 30 minutes to allow coating to adhere to the fish.

    Step 4
    In a large, nonstick skillet over medium heat, heat oil. Add 2 filets and cook 3 to 4 minutes per side, until crust is golden and fish flakes easily with a fork. Repeat with remaining filets.

    Serve immediately with cilantro and lime wedges.
