Chicken with Orange Sauce

I made this dish for my boyfriend. It's delicious and goes well with rice. I took the photo quickly as he was about to eat, so it's not very pretty, and the color is unfiltered.
For this dish, you can use fresh orange juice, but avoid green oranges as they can turn bitter when cooked. I chose to use pure boxed orange juice for a more consistent flavor.

Clean the chicken and let it dry. Today, I used chicken thighs, so I removed the bone in the middle to make it easier to eat.

Marinate with chili paste, sugar, fish sauce, seasoning powder, chopped onion and garlic, and ground pepper. Let the mixture sit for about 30 minutes to 1 hour to absorb the flavors.

While waiting for the chicken to marinate, prepare to boil some vegetables to serve on the side. I was in a hurry, so I used frozen vegetables for fried rice, but you can substitute with okra or other vegetables to your liking for better taste.

Add a little cooking oil to a pan, then sear the chicken over medium heat, being careful not to use too high a flame. Just sear the chicken until slightly charred, so the inside remains juicy and tasty. After searing, remove the chicken and let it drain.

Place the chicken in a new pan, stir it around a few times; then add enough orange juice to cover the chicken pieces, simmer over low heat until the sauce thickens. Remember to continuously spoon the orange juice over the top of the chicken to help it absorb the flavor and develop a nice color.

Arrange on a plate with the side vegetables and enjoy 😁😁😁
