This recipe came about because I was craving red grilled chicken from a street vendor, but after riding my motorcycle around several times and not finding any, I ended up going to the fresh market and making it myself at home.

This recipe came about because I was craving red grilled chicken from a street vendor, but after riding my motorcycle around several times and not finding any, I ended up going to the fresh market and making it myself at home.

Chop the chicken frames into pieces as needed. Remove the bones from the chicken thighs and cut into pieces. Prepare the duck beaks and chicken wings. Wash everything thoroughly and let drain.

Prepare the marinade ingredients: Pound the peppercorns, garlic, cilantro roots, and lemongrass together until fine.

Transfer the pounded mixture to a large bowl. Add the palm sugar, soy sauce, oyster sauce, seasoning powder, brown sugar, evaporated milk, and food coloring. Mix everything together well. Taste and adjust seasoning as desired.

Place all the meats in a large bowl for marinating. Pour the marinade over and mix well to coat everything. Cover and refrigerate for at least 30 minutes (overnight is even better).

Thread each type of meat onto skewers. Secure the end with wire to prevent the meat from falling off while grilling.

Light a charcoal grill. Grill the skewered meats over low heat until cooked through and nicely colored.
