Ingredients

  1. 1/2 tablespoonunsalted butter
  2. 1/2medium crisp apple, about 3/4 cup diced
  3. 11/2 tablespoonshoney (OR 1 tablespoons light brown sugar), plus a little more to drizzle over the finished oatmeal
  4. 1 teaspooncinnamon
  5. 1/8 teaspoonground ginger
  6. 1/8 teaspoonground nutmeg
  7. pinchsalt
  8. 1 cupwater
  9. 1/2 cupold fashioned oats (or gluten free oats!)
  10. 1/4 cupchopped walnuts (optional)
  11. 1/4 cupraisins (optional)
  12. 1/8 cupmilk (optional)
  13. 3 slicesbanana, garnish (optional)

Cooking Instructions

    1) In a medium saucepan, melt the butter over medium high heat.

  2. 2

    2) Add 1 cup of the apples, the honey or brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the apples are softened.

  3. 3

    3) Pour in the water, turn the heat up to high, and bring to a low boil.

  4. 4

    4) Add the oats and reduce the heat to medium/medium high. Cook, stirring occasionally for 3-5 more minutes.

  5. 5

    5) Add the walnuts and raisins (if using), and continue cooking until most of the liquid is absorbed.

  6. 6

    6) Divide the oatmeal between two bowls, sprinkle each with the remaining apples or banana slices, drizzle with a little more honey or brown sugar, and splash 1/4 cup milk into each bowl.
