Remove the skin from the chicken. Take off all the meat and chop in small pieces. The meat shreds a little on its own. Put into a medium bowl.

Now add the chopped onion and salt and white pepper. Add the mayo a little at a time to mix everything together so it's not soupy but nicely covered. The amount depends on how much chicken you got from the rotisserie itself, their sizes vary alittle.

You need very little salt because it is a rotisserie chicken.

It is good to let this sit for at least an hour in the refrigerator before serving, but you can eat it right away. Enjoy!!
