This recipe creates it's own sauce you'll serve over rice. The chicken turns out so tender, really just falls off the bone. A bit sweet with savory notes. You can use fresh mango's but having frozen chunk mango means you can keep all ingredients on hand. This is such an easy recipe to put together. Just a few minutes to prepare. Cook your rice while chicken is in the oven. Little effort for tasty results! As my step daughter says, this is a plate licker🤤
To make this dish even better, assemble it the night before. Place covered in the refrigerator. Pull it out and place in cold oven while it starts to preheat. Chicken marinates. Absorbs more flavor. Crazy easy dish to make this way.

Ingredients

4 people
  1. 8skinless bone in chicken thighs
  2. 1 1/2 cupsfrozen mango, thawed
  3. 1/2 cupthai chili sauce
  4. 1/2 cupsoy sauce
  5. 1/2 cupoyster sauce
  6. 1/2 teaspoonsalt, 1/2 pepper
  7. 2 tablespoonsbrown sugar

Cooking Instructions

45 minutes
  1. 1

    Take chicken thighs and place in an 8x8 baking dish. Sprinkle with salt and pepper.

    Take all other ingredients and place in a blender. Pulse blend until mango is chopped but not fully pureed.

    Pour mixture over chicken and cover with aluminum foil.

  4. 4

    Bake at 350 degrees in preheated oven for 40 minutes or until chicken is cooked thoroughly.

    Serve over rice.
