In Bengal there are so many different ways to enjoy Summer time vegetables. One kind is Potol but this is different using Potol Khosha or skin and making a Khagina or Mash
Steps

Peel the skin of Potol and add to a bowl, add water, bay leaf and salt and bring it to boil.

Drain and discard the bay leaf and add the boiled peels into the blender, blend smooth

In a wok heat mustard oil, add bay leaf, whole red chilli and cinnamon stick. Stir once and add chopped onions and cook until brown

Add peel paste and cook until well done, add ginger paste and salt and sugar. Keep stirring until oil surfaces

Add turmeric powder, cumin powder and mix well.

Add ghee and garam masala powder and mix well, set aside
- 7
Serve with rice
