Lahmacun

Lahmacun (pronounced as Lahamajoun) is a thin Turkish pizza without the cheese, and it is usually eaten rolled up. Like any street food, lahmacun is the ultimate Turkish street food.
Lahmacun has two components: dough and meat. You can use store bough pizza dough or make your own homemade dough. Just roll it out thin like flatbread.
I took a shortcut! I used my leftover tortillas and it worked just fine. This is why I only provided the recipe for the toppings. If using dough, turn out the dough on a floured surface and divide it into 6 even pieces. Roll out each piece into a very thin round or oval shape. Try to get each one as thin as possible. Spread the topping thinly and evenly over the top of each dough.
It is then topped with a flavour-packed mixture of minced meat with peppers, tomato, fresh herbs and spices. Onion, tomato, lettuce, parsley, and lemon are all common garnishes to put atop lahmacun. I just used cucumber, onion and tomato while my meat base was ground chicken.
Not only is it super portable but it is also incredibly flavourful and satisfying. What makes lahmacun a fun meal for a party, is that everyone can top it according to their tastes!
Store leftover lahmacun separated by parchment or waxed paper in an airtight container in the fridge for up to three days.

Preheat oven to 450 F. Put a large a nonstick sheet tray into the oven to preheat.

Mix all the ingredients, except the tortillas, together in a large bowl. Set aside.

Spread the topping evenly over the tortillas.

Remove the sheet tray from the oven and carefully place each tortilla on it. Don’t allow them to overlap.

Bake for 7 to 10 minutes, until the topping is sizzling, and the edges of the tortilla are brown. Don’t over bake.

Serve the lahmacuns piping hot with desired garnish.
