I wanted to make a banana cake, but I was out of eggs. It turned out great nevertheless.

The amount of honey (sugar) depends on the sweetness of the bananas, so adjust accordingly. The baking time also depends on the oven, so adjust that too. I recommend you use fully-ripened bananas. For loaf pan: 18 x 8 x 6 cm [7 x 3 1/4 x 2 1/4 in]. Recipe by Orenjiringu

150 gramsPancake mix
1 largeBanana
60 gramsMargarine (or butter)
20to 30 grams Honey (or sugar)

Steps

Mix the margarine and honey (or sugar) in a bowl.

Add mashed bananas to the bowl and continue to mix.

Add pancake mix to the bowl and cut in with a rubber spatula.

Line the mold with parchment paper and pour the dough in. Bake for 40 minutes in a 355°F/180°C preheated oven.
