This is a simple and super-easy recipe prepared with minimal regular spices stuffed in small verities of bitter gourd, and cooked in slow heat.
I have not scraped the skin, but if you don’t like bitterness much, scrape the skin lightly.

This is a simple and super-easy recipe prepared with minimal regular spices stuffed in small verities of bitter gourd, and cooked in slow heat.

Wash the bitter gourds and make 4-part slits.

Mix the dry masalas with little water to make a thick paste. Stuff the masala into the bitter gourds with the help of a small spoon.

Heat oil in a heavy bottomed pan, add the stuffed karela and cook in slow heat, with the lid, until karelas are tender and roasted from all sides.

When almost done, add onion and chilli and let cook for another 5/7 mins. Serve with Rice/Roti/Paratha etc.
