Mulled wine

What to do with a bottle of wine that isn't very good? Or one that's a little off? Make mulled wine!
I'm still playing with the amount of sugar, last batch was too sweet.

Cooking Instructions
- 1
Put the juices and spices in a pot or slow cooker. Add a couple slices of the lemon.
- 2
Heat slowly to give the spices a chance to flavor the mix Stir occasionally until sugar is dissolved.
- 3
When the mix is hot (doesn't need to boil, but close to it), and about 30 minutes before serving, add the wine. Stir well and allow it to warm up. (This doesn't have a lot of alcohol, so if you leave the wine in for a long time, the alcohol evaporates).
- 4
Strain out spices. Serve in a mug. Garnish with a [new] slice of lemon and maybe a cinnamon stick.

Christmas Mulled Wine Velvet Cake Christmas Mulled Wine Velvet Cake
My family all like Christmas pudding, but it's just not for me. This year I decided to try making a Christmas-style cake for me to have at Christmas, and hopefully win some of the others away from the evil Christmas pudding too ;).I took a red wine velvet cake recipe that I had and altered it by replacing the red wine with mulled wine, and added some Christmas spices to the icing. I am very pleased with the result of my test bake - it's lovely and moist, rich and and the spices come through nicely. Waiting till Christmas now to see if I can win the family over. bruce78952 -

Lapsang Souchong Infused Ice Wine Lapsang Souchong Infused Ice Wine
Ice wine is a type of sweet wine produced from grapes that have been frozen while still on the vine. The sugars and other solids in the grapes do not freeze, but the water does. This allows for a more concentrated grape juice to develop, and then a small amount of very concentrated and sweet dessert wine.We have infused ice wine with Organic Lapsang Souchong tea. The smokiness of the tea compliments the sweetness of the ice wine very well. While it's easy to create this tea and ice wine infusion, because ice wine can be expensive we suggest trying a small amount first to see how much you like it. Michael -

Chestnuts Simmered in White Wine Chestnuts Simmered in White Wine
I usually simmer chestnuts in red wine, but fancied trying white wine this time.By adding these chestnuts to a plastic bag (with no top) and placing them in the chilled compartment of my fridge for 1 hour, the sweetness increased tenfold. This time I used a whole bottle of wine and didn't add any water. It's best if you have 800 ml of wine, but you can make this recipe with 720 ml as well. For a manageable amount.
