Garlicky Chicken with caramelized sweet onions (Rice Cooker)

This was inspired by the French dish from Provence that uses 40 cloves of garlic with chicken stew. I had bought a poo bunch of garlic and onions for a dish previously and wanted to use them up. Super easy, added just less than 1/4 cup of water and stewed it all in the rice cooker. You can use your instant pot too :)

Really tender chicken with a mellow sweetness from the garlic and sweet onions. Easy weeknight dinner!

Ingredients

  1. 2large chicken drumstick
  2. Capsicums
  3. 2large onions (thickly sliced)
  4. 20 clovesgarlic (skin removed)
  5. 2dried shiitake mushrooms
  6. 1/4 cupmushroom dashi
  7. 1 tbspmirin
  8. Black pepper and sea salt

Cooking Instructions

  1. 1

    Wash and Pat dry chicken drumstick. Marinate with mirin, black pepper and sea salt. Leave for 30 mins.

    Layer thickly sliced onions at bottom of rice cooker. Add garlic cloves and 1/2 of capsicum. Add chicken, and place more capsicum on top.

    Cook on brown rice cooking mode. Takes about 70 mins in my rice cooker. Done!
