This is my version for Fiorella (@Fiore66) on Cookpad. It's a healthy option for breakfast or a snack. I replaced sugar with erythritol, and the jam has no added sugar.

This is my version for Fiorella (@Fiore66) on Cookpad. It's a healthy option for breakfast or a snack. I replaced sugar with erythritol, and the jam has no added sugar.

In a mixing bowl, beat the eggs with the erythritol until the mixture is light and fluffy. Add the vanilla powder and vanilla extract. While mixing, add the milk and vegetable oil. Finally, sift in the flour and baking powder and mix until combined.

Line a loaf pan with parchment paper and pour in the batter. Swirl in the jam and mix gently with a fork to distribute. Bake in a preheated oven at 350°F (180°C) for 30–35 minutes. Check doneness with a toothpick.

Once cooled, brush the top with agave syrup and sprinkle with sliced almonds.
