Salmon and spring greens

This delicious seasonal dish makes for a yummy spring / summer mid-week winner. It's super quick to pull together and could be served warm or cold. Much like my last recipe, the inspiration came from my friend Rachel who is a nutritionist so I can only assume it's nutritionally well balanced. I've adapted it slightly to include the orzo to make it a little more substantial for dinner.
The secret to speed in this dish is cooking all three elements (fish, orzo and vegetables in parallel).

Preheat the oven to 180 degrees. Cook the orzo according to the packet instructions until al dente.

Place the salmon fillets on a baking sheet and cook in the oven for 10 minutes.

Heat a griddle plan over a medium heat. Add the asparagus and broccoli, drizzle with olive oil and season with salt and pepper.

While everything is cooking, make the dressing by whisking together the chopped herbs, lemon zest and juice, capers, mustard, approx 3 tbsp olive oil, salt and pepper. Taste and adapt as needed.

Once everything is cooked, assemble the dish by mixing the dressing into the drained orzo pasta. Then chop the veg into bitesized pieces and mix it into the orzo. Finally, flake the salmon and serve over the top of the orzo pasta.
