Guvar nu shak/Gujrati Style Guvarfali ki sabzi/Guar subzi

Guar sabzi is very simple and easy to make gujrati style sabzi is made with guvarfali with special masala and regular spices.
It has little sweetness ,,sourness and spicy in terms of taste, just like any gujrati food.
It is generally serves as a side dish with roti and Paratha.

Wash guvar and dry it completely.cut the head and tail and discard them.

Cut into half and chop all in same way.

Heat Oli in pan add guvar and fry them on medium -high flame 🔥.

Meanwhile in a mortal pestle,add Red chilli powder, coriander powder, cumin seeds, fennel seeds, sesame seeds, chavanu, gathiya.
Make it into a coarse powder.
Masala is ready. - 5
After,7 -10 minutes check by breaking guvar with a spatula.if it breaks easily it is cooked. Take it out in a plate and put it aside.

Now in a same pan, add carom seeds, hing and cumin seeds, saute for a minute. Add ginger and green chilli paste, saute it.

Then add chopped tomatoes and turmeric powder and salt.cook till tomatoes become soft and mashy.

Now add prepared masala and cooked till oil separates from its sides.then add water and mix well.
Cover and cook subzi for 5 minutes on law flame 🔥. - 9
Add jaggery, garam masala and lemon juice mix well.

Garnish with coriander leaves and serve.
