Carrot cake 🥕
Really quick and simple carrot cake

Preheat the oven to 180C and put the rack at the middle.

Whisk flour, sugar, baking powder and cinnamon in a mixing bowl until combined..

Add to the mixing bowl eggs, oil and vanilla extract and mix everything together. Stir in the carrots.

Pour mixture into the cake pan. Small tip: for cake to come out easily you can spray pan with oil or grease it with butter or simply use parchment paper.

Bake cake for 35-40 min or until tooth pick inserted in the middle will come out clean. Leave it to cool down.

To create frosting simply mix the cream cheese with condensed milk and lemon juice until homogeneous.

After cake cooled down to room temperature, spread frosting on top of it and let it firm up in a fridge for at least an hour

As a last step you can decorate the top with chopped nuts or if you're not the biggest fan of nuts just skip this step and enjoy cake as is 😊
