2large Sweet Potatoes
1sweet onion, cut into wedges
2 clovesgarlic, sliced
3 tbspolive oil
1 tspSalt
1 tspPepper

Peel and cut the sweet potatoes into slightly larger than bite size pieces.

Cut the onion and mix in with the sweet potato together with 3 tbsp olive oil.

Roast sweet potato mixture in the preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 40 minutes.
