Tomato Coconut with Mixed Vegetables Poha or flattened rice flakes is a tangy and healthy recipe which can be served in breakfast,as a quick snack or packed in kid's lunch box. It is very light and full of essential nutrients. There are several variations of making this healthy poha recipe and adding fresh coconut, chopped green chillies ,tangy tomato and chopped veggies make it colourful as well as tastes delicious.

Tomato Coconut with Mixed Vegetables Poha or flattened rice flakes is a tangy and healthy recipe which can be served in breakfast,as a quick snack or packed in kid's lunch box. It is very light and full of essential nutrients. There are several variations of making this healthy poha recipe and adding fresh coconut, chopped green chillies ,tangy tomato and chopped veggies make it colourful as well as tastes delicious.

Place the flattened rice flakes or poha in a colander and wash it gently. Drain water and set aside for 5 minutes. Smear turmeric and set aside.Chop carrot,beans and potato into small cubes.Fry peanuts and later curry leaves.Remove it in a plate.In the remaining oil fry the potatoes in medium flame till soft.Set aside.

Now sprinkle mustard and cumin seeds.When they sizzle,add pinch of hing and toss.Now add grated ginger and saute.Add chopped onion and saute till translucent.Add beans carrot and saute sprinkling 1/4 th tsp salt.Saute in medium flame. Add the fried potato and green peas.Also add chopped tomato and fry till tomato and other vegetables are almost cooked.

Adjust salt and sugar to taste.Add chopped green chillies and toss.Now add poha.Add roasted peanuts,curry leaves,half of grated coconut and chopped coriander. Mix well.

Drizzle juice of 1 lemon and toss to mix well.Garnish with chopped coriander,freshly grated coconut,lemon slices and serve hot, sweet,sour,spicy and tangy Tomato Coconut and Mixed Veggies Poha with your favorite juice or a cup of tea.
