Loubieh bi zeit 🇱🇧 Green beans in olive oil

A simple tasty dish that we prepare in Lebanon especially in summer, when green beans are in season. It can be enjoyed warm/lukewarm, or, even better the next day straight out the fridge with flat bread.
This is the first time I made it, so I cooked it over the phone with mum to make sure I get the same taste as hers 😊

Prepare all the ingredients by washing and chopping them.

For the tomatoes, follow this tip to peel them by soaking them in hot water.

Add olive oil in a pot and start by sautéing the onions and garlic until translucent. Then add the chopped beans, salt and black pepper, sautee a bit then cover the pot and turn heat down to medium/low. Cook for 15 minutes, stirring occasionally.

Add chopped tomatoes, stir, cover again and cook for around 20-30 minutes. Check if the beans are very soft this means it’s almost ready! Uncover and cook for another 5-10 minutes to reduce the sauce and thicken it a bit.

📝 all the juices in this dish come from the veggies. We don’t add water at all! Just try to get good juicy tomatoes if possible.

Serve with fresh veggies like peppers, spring onion, radish, olives and mint and eat with flat bread 🫓
