We always make two different Liqueurs with the new cherry harvest. Ingredients

1 hour prep, 6 months fermentation
2 people, makes 3 pints
  • 3 poundsMaraschino type early sour red cherries, stems on, such as Pacific Red, Early Red, or Giant Red
  • 3 cupscane granulated sugar
  • 3whole spice cloves
  • 3 pints80 proof California Brandy

  • Equipment: sterilized wide mouth mason jar, lid and ring. Hydrometer
  • Cost: cherries $6, cane sugar $1, california brandy $12, makes 3 pints

Steps

1 hour prep, 6 months fermentation
  1. 1

    Wash, rinse and drain 3 pounds of unblemished red cherries, stems on. Loosely stuff into wide mouth mason jar. Add cane sugar. Add california brandy. Add one whole clove per pint of brandy. Wipe rim of mason jar with clean paper towel, seal jar with sterilized lid and ring. Shake to check for leaks. Turn daily in dark closet till sugar has dissolved. Taste like Maraschino cherries in six months. Enjoy over icecream.

I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
