Presenting a light and healthy Recipe which is absolutely a delicious vegetable based curry along with fritters to be included in our diet in daily basis.
Steps

Chop veggies

Grind Bengal Gram Dal into smooth paste by adding ginger + green chilli.

Grind Bengal gram Dal into smooth paste by adding ginger + green chilli, then beat for few minutes by adding salt.
Heat oil, then drop small small portions into hot oil and deep fry till crisp and golden brown.
Fritters are ready and keep aside. - 4
In moderately heated pan / kadhai add oil, allow to heat, then add Nigella seeds and allow to sizzle.
Add chopped Potato slices and sauté for 2-3 minutes under medium heat. - 5
Then add ridge gourd + green chilli + little salt + turmeric and sauté for 3-4 minutes. Cover and cook for another 3-4 under medium heat.

Add all spices and sauté for 2-3 minutes.

Add water and mix well. Cook under medium flame for around 5 minutes.

Add fritters and cook for 4-5 minutes. Simmer and cook further for 3-4 minutes.

Dish is done

Serve hot hot with hot steamed Rice or Phuka.
