Aloo Bhindi
Aloo Bhindi is an excellent dish to enjoy during summer.
Steps

Chop Okra / Bhindi and keep aside. Chop potato and onion into small size cubes.

In moderately heated pan add oil, add cumin seeds and allow to crackle then add hing + chopped garlic and sauté for few seconds, then add potatoes and stir fry for 3-4 minutes by adding salt.

Then add chopped Bhindi + green chilli + turmeric powder + red chilli powder + coriander powder.
Mix well and gently stir fry under low to medium flame. - 4
Gently stir fry for 5-6 minutes and let Bhindi turn soft (till 80 %)

Then add chopped onion + garam masala, mix well and stir fry for 3-4 minutes. Lower flame, cover and cook for 3-4 minutes, lastly add salt and mix well.

Dish is ready to serve.

Serve with Phulka / Paratha and enjoy.

Accompany with salad for a complete healthy dish.
