Easy Pizza with Okara Soy Pulp

I was craving pizza, but was too lazy to wait for the dough to rise. So, I tried making the dough with baking powder instead of yeast. Then I added some okara to make the dough a little bit more chewier and moist.

I made mine with soy milk. Because there are lots of toppings, the smell of soy from the soy milk or okara won't be so recognizable.
When the dough is too tough to knead, please adjust by adding soy milk (or regular milk). This may really vary depending on the okara you use. If it's too soft, please add some cake flour. For 2 pies, each 20 cm [7.9 in] in diameter. Recipe by yaburie

Ingredients

  1. 200 gramsCake flour
  2. 70 gramsFresh okara
  3. 1and 1/2 teaspoons Baking powder
  4. 1 tspSalt
  5. 120 mlSoy milk or regular milk
  6. 2 tbspOlive oil
  7. Toppings:
  8. 1/4Onion
  9. 1 sliceBacon
  10. 4Cherry tomatoes
  11. 1 stalkAsparagus
  12. 1/4Paprika peppers
  13. 1Pizza sauce (or tomato sauce)
  14. 1Pizza cheese
  15. 1 dashSalt and pepper

Steps

    Making the dough: Combine cake flour, okara, baking powder, and salt in a bowl. Mix well with a spatula.

    Mix the soy milk and olive oil in a measuring cup. Add that into the mixture from Step 1 and mix with a spatula.

    When the dough comes together, transfer it onto a floured work surface (use some cake flour - unlisted). Knead well. The surface should turn slightly smooth.

    Divide the dough into 2 portions and roll it up into a ball. *You can wrap this up in plastic wrap to freeze and use later. Defrost in the fridge before using.

    Press down with your hands to stretch the dough into a flat ball. Place onto a baking tray lined with parchment paper. Pinch the edges around the perimeter of the dough to make a crust.

    Preparing the topping: Thinly slice the onion. Slice the cherry tomatoes into fourths. Cut the bell peppers into 5 mm cubes, the asparagus into 5 mm slices and the bacon into 5 mm strips.

    Spread out the pizza sauce. Top with onions. Sprinkle some cheese. Then layer the bacon, tomato, asparagus, and bell peppers. Season with salt and pepper.

    Bake in 220℃ preheated oven for 15 minutes. It's done when the cheese melts and becomes slightly browned. One pizza serves one person.
