Grate the zucchini and carrot into a bowl, then use a cheesecloth to squeeze out as much liquid as possible.

Use a food processor to grind the bread into fine breadcrumbs. Then add the onion, parsley, dill, and mint to the food processor and blend well.

In a large bowl, combine all the ingredients: salt, pepper, egg, olive oil, breadcrumbs, flour, and cheese. Mix and shape into fritters. Coat the fritters well with flour and fry them in olive oil until golden brown on both sides. Serve with a little yogurt if you like! Enjoy!
