Measure the quinoa directly into a strainer and rinse it under running water to remove the saponin (a bitter substance that coats each grain, which is not toxic but is better removed). Once rinsed, place the quinoa in a saucepan.

Add the water to the saucepan with the quinoa, add a pinch of salt, and turn on the stove. Once the water starts boiling, cook for 10-12 minutes, then let the quinoa rest for 5-10 minutes with the lid on while you prepare the fish.

Meanwhile, prepare the dressing: dice the mozzarella, tomatoes, and mild cheese; wash the basil and lamb's lettuce. Now, place the cooked quinoa in a bowl, add the prepared ingredients, and voilà!
