In a large, wide pot, melt the lard over medium heat. Cut the pork jowl into several pieces, clean off excess skin, and add to the pot.

Peel the garlic cloves from the head and add them to the pot along with the other ingredients and the pork jowl.

Cook uncovered for 2 hours over medium heat (on a 9-level stove, set to level 5).

After the time is up, remove the oranges and herbs, discard them, and increase the heat to high to brown the pork jowl for 15 minutes.

Once done, let the pieces drain on a rack to release as much fat as possible. Place the pieces in a bowl, avoiding the skin and most of the fat, and shred with two forks. They are now ready to enjoy.
