  1. 8 TbsShredded cooked Pork
    California Farm Beer Soup with Pork Hocks
  2. 8egg roll wrappers, 7”x7” square store bought, or home made 8” round
  3. 2 TbsStrips Sauerkraut
    California Farm Instant Kimchi and Sauerkraut
  4. 2 TbsStrips kimchi
    California Farm Fermented Napa Cabbage Kim Chi
  5. 2 TbsStrips fresh Carrot
  6. 2 Tbsgreen onions sliced lengthwise
  7. 2 TbsStrips sweet red pepper
  8. 2 Tbssoaked soft Mung bean noodles
  9. 2 Tbsfresh mung bean sprouts
    California Farm Indoor Mung Bean Sprouts
  10. 2beaten fresh farm eggs
  11. TbsSambal fermented pepper
    California Farm Hot Red Pepper Sauces: Sambals
  12. TbsKetjap fermented thick sweet soy sauce
    California Farm Fresh Thick Sweet Soy Sauce: Ketjap Manis
  13. 1 cupdipping sauce: juice of 1 lime, 1/2 cup rice vinegar, 1 Tbs palm sugar or black garlic paste, pinch red chili flakes, Tbs thick sweet soy sauce
  14. Equipment: wok, collander to drain
  15. Cost: per eggroll: wrapper 6 cents, pork 10 cents, vegetables 10 cents, spices 4 cents, egg 5 cents, 35 cents per egg roll

    Measure exactly 8 heaping Tbs each (25 grams) of shredded cooked pork and 2 Tbs each kim chi, sauerkraut, fresh slivered carrots, onion, fresh bean sprouts, fresh sweet red peppers and soaked mung bean noodles, evenly distributed over eight egg roll wrappers, drizzle sweet thick soy sauce over, taste.

    Make eight eggrolls. Put two Tbs of the filling along center of the 7” square store bought egg roll wrapper. Or make an 8” round home made egg roll wrapper. Fold 1 inch top and bottom edges over filling, roll tight, glue edge shut by brushing with beaten egg. Allow beaten egg to dry while heating oil.

    Heat oil or lard to 375F degrees in deep fryer. Fry two egg rolls at a time, turn over every few minutes so both sides are fluffy and crisp. Drain in collander. Make the sweet and sour dipping sauce fresh by mixing lime juice, rice vinegar, red chili flakes, palm sugar with Tbs sweet thick soy sauce, taste, add more sugar if needed. Add Tbs of pureed black garlic cloves for an amazing flavor.

    Filter used lard or oil through paper towel in funnel for re-use. Serve eggrolls with dipping sauce. Enjoy.
