Tinde ki Sabji / Apple Gourd Sabji

Tinde ki sabzi is very easy to prepare and is an everyday side dish in summers in Indian homes. Generally tinde are made stuffed but this is another take on this vegetable. Apple gourd or Tinda is a water soluble vegetable which is rich in anti-oxidants and fiber. These light green round vegetables must in your diet if you want to stay healthy and fit.

First of all, wash and clean the tinda, peel it and cut one tinda into four pieces.

After that add chopped tomato, chopped green chillies, ginger pieces and garlic bud in a mixer jar and crush them to make a puree.

Now heat 1 tbsp oil in a pan and add chopped tinda pieces to it, add turmeric powder and salt to it, mix and fry on high gas flame for 2 minutes stirring constantly with a spoon. After that reduce the gas flame and cover the lid and fry for 6 to 7 minutes while stirring in between.

Now when the tinda is fried, take it out in another vessel. Now to make the masala paste, add turmeric powder, coriander cumin powder, Kashmiri red chily powder, spicy red chily powder, kitchen king masala, salt and water in a small bowl and mix well to prepare the masala paste.

Now heat 2 tbsp oil in another pan, add cumin seeds and asafoetida and saute, add finely chopped onions to this, mix well and saute till the onions become soft. After that, add besan to this and mix well and saute for 2 to 3 minutes on slow gas flame.

Now add the masala paste to this and mix well till the oil separates, fry on low gas flame, add tomato puree and 1 tbsp water, mix well and cook on medium to low flame stirring continuously for 4 to 5 minutes.

Now when the oil separates from the gravy, add the fried tinda to it and mix it well and add 1 cup of hot water to it and mix it. And let it boil for a while on medium gas flame.

Now add kasuri methi and milk cream to this and mix well cover the lid and cook on medium to low flame for 6 to 7 minutes. Then add dry mango powder and finely chopped green coriander leaves to this and mix well and cook for 1 minute keeping the pan open.

Now our very delicious and yummy Tinde Ki Sabji is ready for serving. Serve this sabji with roti, Paratha or rice.
