Coconut Ridge Gourd dry curry is a simple yet delectable summer recipe highly relished by vegetable lovers.

Take freshly grated Coconut

Assemble other ingredients

In moderately heated pan add oil, allow to heat, add Nigella seeds and allow to sizzle. Then add potato slices + little salt and sauté for 2-3 minutes. Add chopped Ridge Gourd + salt + Turmeric powder and sauté for 2-3 minutes.

Cover and cook for 3-4 minutes, gradually ridge gourd releases water and shrinks.
Add grated Coconut + salt as required + 3 - 4 tbsp water and mix gently.
Sauté for 4-5 minutes till vegetable is well cooked and water is reduced.
Keep in stand by mode for 2 minutes and dish is done.
Lastly sprinkle little grated coconut and its ready to serve.
