Cast Iron Pineapple Upside Down Cake

Ingredients

  1. Topping
  2. 3 tbspbutter
  3. 3/4 cupbrown sugar
  4. 1 (20 oz)can pineapple slices
  5. 7-14maraschino cherries
  6. Cake Mix
  7. 5 tbspsoftened butter
  8. 1 cupsugar
  9. 2 1/2 tspvanilla
  10. 1/2 cupreserved pineapple juice
  11. 3eggs separated
  12. 1/4 tspsalt
  13. 1 1/4all purpose flour
  14. 2 1/2 tspbaking powder

Cooking Instructions

    Preheat oven to 350 degrees F

    Melt 3 tbsp of butter in cast iron and add brown sugar. Mix. Allow to simmer for about 5 minutes. Add pineapple slices, covering the bottom of the pan. Place cherries in centers of pineapples and open spaces if desired. Remove from heat.

    Dry ingredients: Mix flour, baking powder and salt in separate bowl.

    Prepare cake batter. Cream softened butter and sugar together. Add vanilla. Mix

    Add egg yolks one at a time and mix until smooth.

    Beat egg whites until stiff peaks form.

  7. 7

    Alternate adding pineapple juice and dry ingredients to batter while mixing.

    Fold in egg whites gently

    Pour batter into cast iron pan

  10. 10

    Bake for 30-35 minutes until center is set and toothpick inserted in cake come out clean

    Invert cake onto serving dish and serve
