Slice the onion. Cut the sausage diagonally. Cut the spinach into 4 cm lengths.

Heat olive oil in a pan. Put the onion, sausage and spinach stem and fry.

Turn off the heat and add flour and butter. Stir everything in the pan well with a wooden spatula until the flour is absorbed.

Add the milk and stir with a wooden spatula well, not leaving any lumps. Add the consommé powder and turn on the heat.

After the sauce thickens, add the spinach leaves. Season with black pepper.

Put the plain rice on a heatproof dish and pour over the sauce.

Cut the cheese in half and place top on the sauce. Bake in a grill toaster oven for 3 to 4 minutes until the top is golden brown.
