Cooking Instructions

Bring 1” water to boil with Tsp of salt in cast iron skillet. Dice potatoes in 1 inch pieces, put in skillet, full heat to boil and evaporate the water, about five minutes

When skillet runs dry, turn heat down to half, add 4 Tsp lard, unsalted butter or olive oil around the edges, add optional mild garlic clove, fry potatoes till golden and loose from the bottom, about five more minutes, scrape with spatula, turn, brown other side, serve.

I cut mostly by hand, but 1/8 inch thick is tedious.We use canola oil, drop one chip in the oil when we pour the oil in, add the rest of the chips when the test chip starts baking.
