Ingredients

Ten minutes
2 people
  1. 1pound, 2 large potatoes, or 16 small ones, unpeeled, washed, scrubbed, sliced in 1” pieces
  2. 1” Water to cover potatoes
  3. 1 Tspsalt
  4. 4 Tsplard, olive oil or unsalted butter
  5. Optional: clove of mild elephant garlic or Tbs ground black garlic
  6. Equipment: large cast iron skillet, wooden spatula
  7. Cost: 50 cents

Cooking Instructions

  1. 1

    Bring 1” water to boil with Tsp of salt in cast iron skillet. Dice potatoes in 1 inch pieces, put in skillet, full heat to boil and evaporate the water, about five minutes

  2. 2

    When skillet runs dry, turn heat down to half, add 4 Tsp lard, unsalted butter or olive oil around the edges, add optional mild garlic clove, fry potatoes till golden and loose from the bottom, about five more minutes, scrape with spatula, turn, brown other side, serve.

Thank you for the garlic suggestion. I tried it, really livens up the dish, I added garlic as an option to this recipe.
