Ingredients

  1. 2chicken breasts
  2. 2limes
  3. 2mangoes
  4. 1 tbspavocado oil or more if needed
  5. 1/4 cupdiced red onion
  6. 1garlic clove finely chopped
  7. 1/4 cupchopped parsley OR cilantro
  8. 2 tspred pepper flakes
  9. 1 tbspsalt
  10. 1 tbspground pepper
  11. 1/2 tbspMontreal Chicken Seasoning

Cooking Instructions

    Season chicken breasts with 1/4 tsp avocado oil, 1/2 tbs of salt, 1/2 tbs pepper, 1/2 tbs Montreal seasoning. Let sit while working on salsa.

    Peel and dice mangoes into bite size chunks, dice onions, chop parsley OR cilantro, squeeze one whole lime in bowl, 1 tsp avocado oil and add all salsa ingredients in bowl. Gently mix and refrigerate while cooking chicken.

    In large frying pan add remaining avocado oil (add more if necessary) and garlic on medium heat for 1-2 minutes or until garlic aromatic. Add seasoned chicken breasts and cook on 4-5 minutes (6-7 for thicker cuts) each side until browned. Turn off heat, remove chicken from pan and let sit on cutting board 5 minutes before cutting. Take mango salsa out of fridge and mix to blend ingredients before serving.

    Slice chicken but not all the way through. Just enough so chicken is a bed for salsa and flavors sit and absorb. Transfer chicken to plates and top with fresh salsa. Serve with fresh salad and cilantro rice. Enjoy!
