California Farm Young Potatoes

Planted in January, ripe in June/July. Dug up, washed and stored in a dark cold place.

Ten pieces of potato with one sprouting eye in each piece will each grow ten potato plants with each plant yielding ten potatoes, all in one large deep 3 foot diameter patio pot with one foot of soil and one foot of compost or peat moss. Drip irrigated daily.

The second crop is planted in July, ripe in November/December.

We grow miniature gourmet Siberian and French fingerling potatoes, select the biggest potato each crop to cut in small pieces and grow the next crop.

Crispy Gourmet fingerling potatoes, roasted in 45 minutes, miniatures steamed in one minute in microwave.

Ingredients

45 minutes
2 people, cup of potatoes each
  • 1 cupfingerling potatoes, scrubbed, large ones sliced in half
  • 2 Tbsvirgin Olive oil
  • 2 Tbsunsalted grassfed Butter
  • 1/4Tsfp Herbes de Provence
  • 1/4 TspAleppo Red pepper
  • 1/4 TspFlaked seasalt
  • 1/4 Tspgranulated garlic
  • Equipment: large cast iron skillet, oven
  • Cost: potatoes, farm free, oil, butter, spices 20 cents

Steps

45 minutes
  1. 1

    Preheat oven to 425F degrees, takes ten minutes. Dig up fresh potatoes, wash and cut large ones in half, place in cast iron skillet. Miniature ones go in water.

    Melt butter with spices and olive oil in cast iron skillet on stovetop on low heat, stir and coat potatoes on both sides, then put in 425F degree oven, with cut sides down, about 30 minutes.

    When golden, turn oven broiler on and crisp a few minutes.
