Basic Adobo

Adobo is one of the quintessential dishes of Philippine cuisine, and this is my own basic version. I haven't been able to make it for a while because the large quantities of garlic it generally uses were no good for Mrs Wyrm after COVID messed with her taste and smell, but now that seems to have passed I'll try making it again. The meat I have used here is chicken but pork or a mixture is also doable. 🇵🇭🍗

In a saucepan, combine all ingredients. Let the meat marinate in the mixture for about 1 hour, or overnight in the refrigerator.

On high heat bring to a boil, lowering heat as necessary to prevent boiling over. Let the adobo boil until most of the liquid has evaporated, about 10 to 15 minutes.

After the liquid has reduced, lower heat to medium, add oil, and fry for about two minutes. Serve with warm rice.
