We plant Siberian fingerling potatoes in January for June harvest, and again in September for February harvest. Our gourmet go to side dish when we serve hearty meats like pulled roasted lamb. Let your air fryer do its magic: fingerling or miniature potatoes, Elephant Garlic cloves, shallots, brussels sprouts, fresh mushrooms, all vegetables coated with sesame oil and balsamic vinegar, thyme, salt and pepper, roasted in the air fryer, done in 30 minutes. Pan drippings make a great quick gravy.

Ingredients

  1. 1 cupwhole shallots, same size as mushrooms
  2. 1 cupbrussels sprouts, same size as mushrooms, sliced lengthwise
  3. 1 cupelephant garlic cloves, same size as mushrooms
  4. 1 cupwashed miniature or fingerling potatoes, same size as mushrooms
  5. 1 Cupwhole fresh mushrooms
  6. 3 Tbssesame oil
  7. 3 Tbsbalsamic vinegar
  8. 1 Tspthyme
  9. 1 Tspblack ground pepper
  10. 1 TspMaldon flaked sea salt
  11. Equipment: roasting rack in air fryer, drip pan for gravy drippings underneath
  12. Cost : mushrooms $1, shallots $1, sprouts $1, potatoes 50 cents, garlic/other $1, $2.25 per serving

Cooking Instructions

    Wash potatoes, peel shallots under running water, peel garlic cloves off bulbs, wash brussels sprouts. Stir all ingredients together in sesame oil, balsamic vinegar, lay in air fryer oven on center roasting rack, except the brussels sprouts, drip pan underneath on bottom rack, bake 10 minutes at 445F degrees. After 10 minutes, add the mushrooms and brussels sprouts coated in sesame oil, balsamic vinegar and thyme, pepper, salt, bake 10 more minutes.

    Serve roasted vegetables with roasted potatoes and a hearty meat dish like pulled roasted lamb. Serve with gravy made from roasted vegetable pan drippings. Enjoy.

    For the gravy: Microwave cup of water, 1 bouillion cube beef, lamb, chicken or vegetable, Tsp corn starch dissolved in Tbs cold water, pour into pan drippings of roasted vegetables, stir, serve on the side.
