Ingredients

  • For the Peanut Stuffing;
  • 1 tbspOil
  • 1/4 cupDry Roasted Peanuts (Coarsely Crushed)
  • 1 tbspGinger (Grated)
  • 4-5Green Chillies (Chopped)
  • Salt to Taste
  • 1/4 tspGaram Masala Powder
  • 1/4 cupFreshly Grated Coconut
  • 1/4 cupCoriander Leaves (Chopped)
  • 1 tspSugar
  • 1/4 cupPoha (Soaked and Slightly Crushed)
  • For the Sweet Potato Dough:
  • 500 gmsSweet Potatoes (Steamed, Peeled and Grated)
  • Salt to Taste
  • 1/4 tspCrushed Red Chillies/Red Chilli Flakes
  • 1 tbspLemon Juice
  • 1 tbspGram Flour (Dry Roasted)
  • Other Ingredients:
  • White Sesame Seeds (As Required)
  • Oil (For Shallow Frying)
  • For Garnish:
  • Green Coriander Chutney
  • Sev (Fine)
  • For Green Coriander Chutney:
  • Coriander Leaves (Small Bunch)
  • 4-5Green Chillies
  • 1 sprigCurry Leaves
  • 4Cashewnuts
  • 2 tbspYogurt
  • 1 tspLemon Juice
  • 1/4 tspWhite Pepper Powder
  • 1 tspRoasted Cumin Powder
  • Salt to Taste
  • Black Salt to Taste
  • 2-3Ice Cubes (Depending on consistency)

Steps

    Firstly, wash and soak the poha for 6-8 minutes. Drain it and set it aside.

    Now to make the peanut stuffing: Heat oil in a pan. Add the crushed dry roasted peanuts and saute for a minute. If using raw peanuts, roast till the peanuts turn light golden.

    Then add grated ginger, chopped green chillies and salt and saute for a minute or two. Turn off the flame.

    Add garam masala powder and mix it well.

    Transfer it into a mixing bowl. To it add the freshly grated coconut, chopped coriander leaves, sugar and the soaked and crushed poha and mix until well combined.

    Form the prepared peanut stuffing into small round balls and set it aside.

    Normally for making these chops, potatoes are used but for a healthy twist they are replaced with sweet potatoes. A very healthy substitute. Wash the sweet potatoes nicely. Steam it in a steamer. If boiling in a pressure cooker, add very little water and let it cook only till 1 whistle. Allow it to cool and peel away the skin.

    Grate the sweet potatoes and transfer it into a mixing bowl. Add salt, crushed red chillies, lemon juice and the dry roasted gram flour.

    Mix it well and form it into a dough.

    Now to make the peanut stuffed sweet potato chops, take a portion of the sweet potato dough. Form it into a ball. Press it and spread it out. Add the prepared peanut stuffing and cover it entirely with the sweet potato dough. Give it a patty/chop shape and coat it with sesame seeds.

    If you want the entire chop to be covered with sesame seeds, then oil your palm while shaping it into patties/chops.

    Now for shallow frying the chops, heat 1 tablespoon oil in a pan on medium flame. Place the prepared chops in the pan. Since all the ingredients in the chops are cooked, cook till the sesame seeds get a golden color on both sides.

    Healthy and Delicious Peanut Stuffed Sweet Potato Chops are ready. Serve it immediately with green coriander chutney and sev.

    Sprinkle kashmiri red chilli powder, roasted cumin powder, chaat masala and salt. Drizzle with green coriander chutney and tamarind sauce. Garnish with fine sev and enjoy this delicious Peanut Stuffed Sweet Potato Chaat 😉
