Ingredients

  1. 1 poundSpaghetti (thin)
  2. 4 cupswater
  3. 2 tablespoonsbutter
  4. 2 tablespoonsolive oil
  5. 1/2 cupparmesan
  6. 1/4 cupparsley, finely chopped
  7. 1/2lemon, juiced

Cooking Instructions

    Bring the water to a gentle boil in a large pot.

    Add the pasta and reduce heat to a simmer. Be sure to stir frequently. Turn off the burner once the water has returned to a simmer.

    While waiting for the pasta to soften, shred the parmesan, chop the parsley and juice the lemon. Take care to remove any seeds. Keep stirring that pasta.

    In a large skillet or frying pan, melt the butter and add the oil. This will help prevent the butter from burning. Once hot, add the slices of garlic and sauté until golden.

    After about 15 minutes your pasta should be ready. Drain most of the water from the pasta, but leave about a cup at the bottom. This water will be full of starch which will add a slightly creamy sauce to the oil and garlic.

    Dump pasta and remaining water into the hot frying pan. Season with garlic salt, smoked flake salt and pepper to your desired taste. Stir the pasta until the seasoning, garlic and butter oil is evenly distributed.

    Turn off the burner for the frying pan and remove the pan completely from the heat., Add the parmesan, parsley and lemon juice. Mix well and serve hot.
