Halve peel and thinly slice shallot. Peel and grate garlic. Trim courgette quaternary lengthways. Chop widthways into small pieces. Rough chop coriander.

Cook rice according to instructions.

Meanwhile cook chicken in fry pan. Add shallot once cooked.

Add garlic and half of Parsley and zanzibar curry spice mix to chicken. Cook for one minute. Then add coconut milk and chicken stock paste. Bring to boil then simmer. Add courgette then simmer.

Once rice is cooked zest lime and halve. Fluff rice up with fork and add in lime zest and some lime juice to rice.

Once all cooked serve!
