Soak gammon in bowl of cold water for.x3 hrs

Drain and then place gammon in saucepan. Stud the onion with 4 cloves and add to pan with bay leaves and peppercorns

Preheat oven to 200c /400f/ gas mark 6

Drain gammon remove the skin and most of fat. Score the remaining fat into diamonds stud the remaining cloves and place.into roasting tin

Mix together glaze and spoon over gammon

Bake for 45 minutes basting 3-4 times during cooking..
