Ingredients

55 minutes cooking   4 hours refrigerator
30 croquettes
  1. 1 lb.diced ground chicken
  2. 2 tbsp.vegetable oil
  3. 1 cupdiced onions
  4. 2minced garlic cloves
  5. 1/3 cupsmall diced orange pepper (any color is good)
  6. 1 tbsp.chopped cilantro
  7. 2 tbsp.chopped green onions
  8. 1 tbsp.chopped fresh oregano
  9. 1/4 tsp.ground nutmeg
  10. 6 tbsp.butter
  11. 9 tbsp.flour
  12. 2.5 cupsmilk
  13. breading
  14. Flour
  15. 3eggs beaten with one tablespoon of milk
  16. Bread crumbs
  17. Oil for frying

Cooking Instructions

    Heat a pan with the oil and fry the onions and garlic together.

    Add the peppers, cilantro, green onions, oregano, nutmeg, and ground chicken. Mix well and cook until chicken is done.

    Add butter, let it melt, once is hot, stir in the flour and let it cook for 4 minutes at moderate heat.

    Pour in the milk slowly stirring at the same time. It should be like a very thick béchamel. Let it cook for about 3 more minutes. Do not let it burn. Keep stirring until is very thick. Let it cool off.

    After is cold, place it in the refrigerator for a couple hours. Is better if you let it cool off until next day. After is very cold, shape the mix into little ball or cones.

    BREADING
    Dip the croquettes in flour, egg wash and breadcrumbs. Fry them until it has nice golden color.
