Steel cut oats

I’ve had a container of steel cut oats in the pantry for months. I always eye it and think, nah…and I push it back. Today, I decided to give it a try. I personally don’t view one type of oatmeal better than the other, but I really liked the texture of these steel cut oats.

Most recipes call for overnight soaking of the oats to soften them and make them creamier.
I did not soak the oats! Instead, I toasted the oats in the butter for 2 minutes before adding to the liquid. This toasting step greatly enhanced the flavour of the oats.

Oats are endlessly customizable, never mushy, and can be made ahead for healthy breakfasts all week. Adjust your liquid (milk to water ratio) according to how thick you’d like them to be (less liquid = thicker steel cut oatmeal). Use your favourite milk.

Bring the liquid to a shimmer and after toasting the oats add to the liquid and cook to desired thickness. Oats are a healthy blank canvas for any of your favorite toppings and mix-ins.

Steel cut oatmeal can be refrigerated for up to 1 week and up to 3 months in the freezer. Let thaw overnight in the refrigerator.

Ingredients

40minutes
4 servings
  • 3 cupswater
  • 1 cupmilk
  • 1 tbsp.oil/butter/coconut oil
  • 1 cupsteel-cut oats
  • 1/4 tsp.salt
  • As required add-ins (optional), cinnamon powder, dried fruit, chopped dates, toasted nuts, citrus zest

Steps

40minutes
  1. 1

    Combine the water and milk and simmer over medium heat.

  2. 2

    Melt the butter in a skillet and once shimmering, add the oats and cook stirring occasionally, until golden and fragrant.

  3. 3

    Stir the oats into the milk. Reduce heat to medium low, to maintain a gentle simmer. Cook for 20 minutes, until thick.

  4. 4

    Stir in salt and mix and cook, without scorching, until almost all liquid is absorbed.

  5. 5

    Remove from heat and mix in any of the optional adds-in.

  6. 6

    Rest 5 minutes before serving with desired toppings.
