Shrimp and Grits

Ingredients

  1. Grits
  2. 3 1/2 cupsWhole Milk
  3. 3/4 cupGrits
  4. 1/4-1/2 teaspoonsalt
  5. 3 TablespoonsButter
  6. 4 ouncesWhite Cheddar Cheese Grated
  7. Shrimp and Sauce
  8. 2 lbspeeled shrimp
  9. 4 TablespoonsButter
  10. 3/4 cupOnion Chopped
  11. 1/2 cupGreen Pepper Chopped
  12. 4 ClovesGarlic Minced
  13. 1 TablespoonTomato Paste
  14. 14.5once can of Diced Tomatoes (I use Petite Diced)
  15. 1 TeaspoonRoasted Garlic - Better Than Bullion (Can substitute any Bullion flavor you like) Dissolved in 1/4 cup boiling water
  16. 2 teaspoonsCajun Seasoning (See Recipe on my page)
  17. 1 TablespoonsCornstarch dissolved in 1/4 cup water
  18. 1 TeaspoonWorcestershire Sauce
  19. 1/3 CupHeavy Cream
  20. Salt and pepper to taste

Cooking Instructions

30 minutes

    In a medium saucepan slowly bring the milk to a boil

    Add salt.

  3. 3

    Add the grits while stirring.

  4. 4

    Bring the mixture back to a boil.

  5. 5

    Reduce heat and cover.

  6. 6

    Simmer for 20 to 30 minutes, stirring every 3 minutes to prevent lumps.

    While the grits are simmering start the sauce for the shrimp

  8. 8

    Melt Butter in a large Frying Pan.

    Cook onion and pepper for 3 to 5 minutes until tender.

    Add garlic and cook for 1 minute.

    Add tomato paste and fry for 3 minutes.

    Add can of tomatoes, bullion and Cajun seasoning.

    Heat mixture to starting to boil.

    Add shrimp and cook until opaque.

  15. 15

    Add cornstarch mixture while stirring to thicken the sauce.

  16. 16

    Add Worcestershire sauce and stir in.

  17. 17

    Add heavy cream and heat through. Do not boil.

  18. 18

    Stir cheddar cheese into the grits.

  19. 19

    Put serving of grits on center of plate. Top with shrimp and sauce. Serve immediately.
