California Farm Air Fryer Rack of Lamb Dinner

It only takes 18 minutes to bake a whole rack of lamb, 8 lamb chops, in my counter top air fryer and I can bake a second layer of french fries and vegetables at the same time, much quicker than in my big oven.
The lamb chops baked medium rare with a nice crust and stayed juicy when baked on the rack and then cut.

Ingredients

Preheat 10 minutes, airfry 18 minutes
2 people, rack of lamb
  1. Racklamb, 8 ribs
  2. Cloveelephant garlic
  3. TspMaldon flaked seasalt
  4. Tspcracked pepper
  5. leavesRub of fresh mint
  6. Tbswarm honey
  7. 1Idaho potato, sliced in 1/2” french fries
  8. Same amount of zucchini in 1/2” sticks
  9. Same amount of carrot in 1/2” sticks
  10. Same amount of sweet pepper in 1/2” strips
  11. Spray of olive oil
  12. Equipment: counter top air fryer, internal thermometer, refillable olive oil sprayer, brush
  13. Cost: lamb $16, vegetables $2, $9 dinner

Steps

Preheat 10 minutes, airfry 18 minutes
  1. 1

    Turn air fryer to 400F degrees. Rub and brush room temperature rack of lamb with garlic, mint, pepper, salt, honey. Lightly coat lamb and vegetables with olive oil spray.
    Bake 18 minutes for medium rare, that is an internal temperature of 125F degrees. Rest 15 minutes to finish internal cooking. Done, enjoy with mint jelly.
