Ingredients

  1. 1 cupyellow corn meal
  2. 1 cupall purpose flour
  3. 3 tablespoonssugar
  4. 4 teaspoonsbaking powder
  5. 1/2 teaspoonssalt
  6. 1 cupwhole milk
  7. 1egg
  8. 1/4 cupvegetable oil
  9. 1 cupwhole kernel corn drained
  10. 1/2 cupshredded cheddar cheese
  11. 2jalapeños deseeded and finely chopped

Steps

  1. 1

    Preheat oven to 425 degrees Fahrenheit. Grease or spray an 8 inch square baking dish.

  2. 2

    In a large bowl combine cornmeal, flour, sugar, baking powder and salt.

  3. 3

    Add milk, egg and oil. Beat until fairly smooth.

  4. 4

    Add 1 cup whole kernel corn and 1/2 cup cheddar cheese and 2 diced jalapeños.

  5. 5

    Place batter in prepared baking dish.

  6. 6

    Bake 20-23 minutes until brown around edges and wooden pick in center comes out clean.

  7. 7

    Cool for a few minutes before slicing.

I use Aunt Jemima yellow enriched. It is fine texture.
